I thought about this further...

Apart from including ICC profiles, our best option to communicate grayscale in a scientifically unambigious way,

Have someone seen a ICC profile, a EXIF object, a BROUZOUF object, make something else than adding ambiguity? ( Don't say waste CPU cycles and RAID cylinders, I know )

Huh?

ICC profiles REMOVE ambiguity - they precisely define the interpretation of the values in the image. They certainly are not a waste of time or space.

EXIF helps reduce ambiguity about the image data (but since everything is marked as sRGB, Adobe RGB or untagged - it doesn't remove it).
